What Is Unripe Plantain/ Green Plantain?

Unripe plantain is simply plantain that has not yet ripened. It is bright green in colour and has a thicker outer skin than ripe plantain.

Now, there are 3 main ripening points of Plantains.

Green Plantain

Yellow Plantain

Black Plantain

Unripe Plantain
Ripe Plantain
Over-ripe Plantain




Fairly hard pulp (outer skin) and inside

What Makes Unripe Plantain Different From Ripe Plantain?

Unripe plantain is different from unripe plantain in taste, colour and nutritional profile.

So, asides the physical differences, there are other few important nutritional differences between ripe and unripe plantain.

  1. 1 finger unripe plantain
  2. 1 medium size Onion
  3. 3 medium size of green habanero pepper
  4. Fresh tomatoes
  5. 2 fresh eggs
  6. Salts and seasonings
  7. 1 cooking spoon vegetable oil
  8. Garlic and ginger

Cooking Instructions

  1. Step 1

    Boil the unripe plantain in salted water

  2. Step 2

    Prepare the poached eggs

  3. Step 3

    Chopped all the vegetables (onions,tomatoes and pepper), garlic and ginger

  4. Step 4

    Heat the oil in a saucepan, then add in the chopped vegetables, garlic,ginger, salts and seasonings. Stir and allow to simmer a bit, do not overcook the vegetables.

  5. Step 5

    Add in the poached eggs, taste and correct for salt if necessary.

  6. Step 6

    Serve with the boiled unripe plantain
