[FOODIES CORNER] Basic recipe and cooking instructions for Nigerian fried rice

The Nigerian Fried rice recipe is fairly straightforward yet tasty recipe. This recipe uses beef liver, a ton of fresh vegetables, and a tiny bit of oil to crisp everything up.

It is one of the most popular dishes in Nigeria because of the addition of beef liver, which gives the dish a very pleasant, rich flavor. However, you can also use shrimp or any other type of protein. You can completely remove the Beef liver or Shrimps if you want to make vegan fried rice.

This fried rice is completely different from the well-known Asian Chicken Fried Rice because the latter’s flavor is enhanced by the soy sauce, whereas the former’s flavor is enhanced by the curry powder, thyme, seasoning cubes, and, of course, the abundance of vegetables like carrots, green beans, peas, sweet corn, and onions.

Similar to Jollof Rice, we savor these meals so much that we can hardly survive without them during gatherings and festive seasons. This meal can be prepared quickly.

COOKING INGRIDIENTS

Rice

Sliced Cabbage.
Sliced Carrot.
Sliced Green beans.
Peas.
Sliced Green pepper.
Cow Liver
Chicken.
Vegetable oil
Sliced Onions.
Curry powder (coloring spice)
Salt and pepper to taste

COOKING DIRECTIONS
Boil chicken and liver (both together) with all the spices (salt, sliced onions, thyme spice, curry, seasoning cubes).

Allow the meat to cook for ten to fifteen minutes, taste for salt, then pick out and deep-fry. Be sure to reserve the stock.

Chop the cabbage, green beans, carrot, liver and set aside.

Chopped cow liver, chicken stock (meat water, green peas, Chopped cabbage, chopped carrot , green beans, and sweet corn.

Remove the white center seeds from the green pepper and also slice and set aside.

Parboil the 4 cups of rice also and cook with half of the meat stock (water from the meat) and two cups of water, cook until it is about 70% done.

Set your cooking pot on heat, allow drying, then pour in about 200ml of vegetable oil.

You can continue with the same oil you used while frying the meat (that is only if you fried the meats).

Allow heating, then add the sliced onions, stir for 1-2 minutes.

Then add the chopped carrot and green beans, any of these two can actually go first.

Add the chopped liver and sweet corn, stir.

Meat stock (water from the meat) should follow, add ground pepper (optional), add salt and, add seasoning then stir and taste and adjust seasoning if necessary.

Add the green peas.

Stir for 1-2 minutes then add cabbage and the curry powder.

If you are satisfied with the taste, then add the green pepper, stir.

Add the almost-done white rice and stir fried rice.

Stir all together, cover your pot and allow to simmer for 5-7 minutes.

Serve with the fried chicken, beef, turkey, plantain or coleslaw.
